I guess that God wants us to consider how holy He is and that is why He wanted the Israelites to have all of these dietary restrictions. I like Lev 20:25,26 "You are holy to me, because I, the Lord, am holy and I have set you apart for the nations to be my own." Being set apart still applies to me and that is why we have to consider ourselves strangers in a foreign land and keep ourselves holy amongst all that is not here on this earth.
